Lol…. My momma used an old pillowcase to roll her dumplings out and they dried out overnight. I think they call them slick dumplings cuz they are thin and don't puff up… Probably all purpose flour… The other day my daughter approaching 40 yrs old asked me if I still had that pilllowcase.

I appreciate this video because my Mama’s dumplings were not good. They were very heavy and doughy so she rarely made them. My grandma made delicious chicken and dumplings and I love them, especially with lots of black pepper!
I would always use milk for my dumplings. I do want my dumplings to puff up a little, not like a drop dumpling but definitely not flat. It’s gonna be really good Tammy. Love ya!❤
I make Polish dumplings which are just big drop noodles similar in texture to 😢spaetzle but larger. A single small batch is 1 1/3 cup flour, 1/2 cup milk, 1 tsp salt and one egg. You can use them in soup or fry them in bacon grease and onions (optional). I always make a double batch. Yummy yum yum. I use them in my chicken and dumplings. To cook them you drop them in gently boiling broth or salted water using a spoon. They grow so you don’t want to fill the spoon. Just the front half. For smaller dumplings I use a tiny baby spoon 🥄. Drop them in boiling water and when they float boil gently for 10 minutes. Move them to soup or to heated frying pan with bacon fat and fry until they are slightly golden on both sides. You don’t want to use a lot of grease, just enough to fry. You can use butter as well, but I never do. I serve with my Polish dinner or pork chops. I use them in creamy chicken and dumpling soup.

Thank You for showing your techniques. I’ve always wanted to learn to make dumplings like you demonstrated. Lifting up a rolled slab of dough to see if it tears is one of those tips that will stay with me, it’s that good! I will make these rolled dumplings next week (I just ran of self rise flour).I grew up with dumpling that consisted of a glob of biscuit dough plopped on chicken stew. They were ok but parts of the chicken stew would stick to the biscuit dough, & which kinda bugged me. Your style of dumpling seems more appetizing & I like that your dumplings cooked in broth. I plan to make rolled dumpling next week. The tips I picked up from this video are going in my book (just a plain book where I record special notes & tips to refer back to). I saw your recipe for sage milk gravy and I am going to make a different version only because I do not have fresh sage. I am going to use fresh rosemary instead. At the end I am going to swirl about 3 tablespoons my leftover homemade cranberry sauce into it for a bright burst of flavor to the garlic and rosemary.
The half inch thick porkchops are on the counter and will go into the heavy skillet per your instructions for supper tonight!

I'm lazy. I just cut some flour tortillas and throw them in. LOL
I use a pizza cutter also but I use AP flour and broth

My Mother made her dumplings with all purpose flour, lard & salt with milk so they didn’t get fat. They were very tender & light, & melted in your mouth.
I make mine that way too & everyone loves them.
I tried making them your way once & they were doughy, we didn’t care for them made that way, but hey, to each his own taste right ?

Hi Tammy!!! I never made rolled out dumplings ever. Guess what you would call mine drop dumplings. Only made Chicken 🐔 and dumplings once. One of my family s meals is Chicken Paprikash…I always made extra dumplings also…Just a few changes I guess and it could be Chicken and Dumplings…Nice Video!!!…🦋
