1. Taberna Laredo -Upscale traditional Tapas with an immense wine list focused on Champagne and Burgundy. Really wanted to try Substance as I’d only ever tried it as a still wine, pre 2nd fermentation. This ‘16 disgorged bottle was deep, layered, oxidative bliss. Fantastic if you know what to expect (sparkling dry oxidative sherry) but for me not worth the 2x price vs Initial.

  2. Angelita – Restaurant with an immense wine list and some very nice bottles. Tasting menu is great value. I went with a Guilbert Gillet as both my wife and I love that powdered sugar jummy fruit. First ‘23 for me and it had a bit more spice and leather than I remember. Absolutely fantastic.

  3. Cannibal mystery White Rioja 17. Also delicious! No idea who the producer was.

    What did the substance set you back there? I agree that I actually like the Initial better for the price. I actually think I like the Guillaume Selosse wines even better but also super expensive
