Finally achieved the perfect wing on this Super Bowl Sunday. First pic is after the smoke second is the finished product. Smoked for 265 for 1 hour. Let simmer in smoker for additional 30 min to rest. Deep fry for 3-5 min to get a crisp finish. 🤝

    By ‘let simmer’ do you mean you turn the smoker off and just leave them? Or set it to 185 or so (simmer temps) for 30 min
