Tomato Carpaccio
Approx. 6–7g net carbs per serving
Ingredients:
2 medium heirloom tomatoes, thinly sliced
2 oz burrata, torn
1½ tbsp extra virgin olive oil
½ tsp red wine vinegar or champagne vinegar
1 tbsp finely minced shallot
1 tbsp capers, rinsed and chopped
Pinch lemon zest
Salt, to taste
Black pepper, to taste
Fresh basil leaves
Instructions:
1. Thinly slice tomatoes and arrange in a single layer on a plate.
2. Tear burrata into small pieces and distribute evenly over tomatoes.
3. In a small bowl, whisk olive oil, vinegar, shallot, capers, lemon zest, and black pepper.
4. Spoon dressing lightly over the tomatoes and burrata.
5. Finish with basil and a small pinch of salt if needed. Serve immediately.
Notes:
Tomatoes are portioned to keep net carbs under 10g per serving.
For very strict keto, reduce tomato or shallot slightly.
Optional: add avocado or grilled protein for more fat.

That’s nowhere near a carpaccio. At best, you could call it a caprese salad, which it pretty much is. And that’s way too many net carbs for most people on keto.
