Shish Barak is the ultimate Lebanese/Levantine comfort food, but we’re giving it a “Gourmet Fitness” evolution.
We’re swapping standard flour for Jovial Einkorn, centuries old ancient grain that’s easier on the gut and richer in protein. We bonded it with blended cottage cheese to create a high-protein dough.
The Upgrades:
Wild Bison: Leaner than beef, richer in iron, and hits differently with the 7-Spice.
The Sauce: A silky Greek Yogurt emulsion stabilized with a whole egg for a glossy, high-protein finish, no cornstarch needed.
To be mixed with the Sauce: Sizzling cilantro, garlic, and pine nuts.

The Method:
1. Blend cottage cheese until smooth.
2. Mix with Einkorn flour & rest (Ancient grains need patience).
3. Stuff with 7-Spice Bison & fold the “hats.”
4. Air fry for the crunch (1 baked them), then drown in the garlic yogurt.
