Extra hard noodles today. Usual choice would be extra soft.

Still prefer extra soft.

    Extra soft all the way, love noodles that soak up all the broth.

    Real Hakata–which Ichiran is not–is hard.

    I always go with the extra firm/hard option for hakata/thin straight noodles. I love the chewiness of it, and to me, the broth sticks to the noodles more with each slurp when the noodles are firm
