Milk 50 g

Starter 127g

I did 4 stretch and folds over two hours of time , every 30 min. Left it until it looked jiggly and had slight bubbles . About 4-5 hours. Then put in fridge overnight . Baked it at 450 with lid for 30 and without for 15.

    It looks beautiful! How do you get that crispy crust? I don’t know what I am doing wrong, everything is good beside a crust, I would like more artisan style of crust to be.

    Your rise is wonderful! Mine usually measure about 5” or 6” high. I have yet to see anything higher than 6”

    Your Dutch oven is encouraging the shape of the loaf and pushing it upwards, kind of like a loaf pan.
