66% hydration

This was about 56 hours in the fridge. Made with fresh yeast.

I used Alta cucina tomatoes and grande cheese.

Broiler toward the end of the bake to give it color.

I mix with a spiral mixer for about 10 minutes. Bulk for 2 hours then ball.

    Man! Wish I had some promo code or similar for % savings on a Baking Steel. Love it, but $125 is a bit much in this economy and I don’t want to buy a $35 knock off on eBay with burrs, sharp edges, that may not be food safe. 🙃 Little help? Anyone have a % off code to spare? 🙏
