Serves 6–8
Ingredients
1 lb mild or hot Italian sausage,

1 lb boneless chicken thighs, diced

2 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced or baby carrots,1 cup

4 celery sticks, diced

1 tsp salt (adjust later)

1 tsp black pepper

1 tsp Italian seasoning

1 tsp crushed red pepper (optional)

1 can (28 oz) diced tomatoes,with basil,oregano and garlic

10 OUNCES cans northern beans, drained and rinsed SOAK IN WATER OVERNIGHT

4 cups chicken broth
4 CUPS WATER

1 cup ditalini (or small pasta),I’m using orecchiette

Fresh parsley for garnish 2 TBSP FRESH CHOPPED BASIL
½ cup grated parmesan cheese

🍲 Instructions
COOK OFF BEANS AHEAD AND DRAIN AND ADD TO SOUP LATER
Brown the meats:
Heat olive oil. Add sausage and chicken. Cook until browned. Remove and set aside.

Sauté veggies:
Add onion, carrot, celery. Cook 5–6 min until soft. Add garlic for 30 sec.
