I am Japanese, and I never bother with mirin in my tamagoyaki. I use sugar and a pinch of salt instead. That should make the dish much more accessible to Americans.
If you do have access to Japanese foodstuffs, get some powdered or concentrated liquid dashi and use that instead of the salt. Typically Japanese home cooks don't go that far, but if you do, it'll take the tamagoyaki to the next level. You'll want to experiment to see how much dashi is needed to add flavor without being overpowering.
Note that all this is for tamagoyaki that's meant to be eaten cooled, whether on sushi or as a side dish in a bento. If you're eating it hot right off the skillet, you can get away with little or no flavoring. A pinch of ketchup goes well with hot tamagoyaki, like it does with all fresh cooked eggs.
The menchi katsu isn't really the correct analogue to a chicken-fried steak; that's more of a meatball. The correct Japanese analogue is the gyu-katsu, which is, like the CFS, a steak covered in breading and deep fried.

If there is only beef in there, it's not a croquette. A Japanese croquette is at its core is deep fried mashed potato with some beef. What you showed here is more like a cheap katsu made like its a croquette. I don't doubt it tastes amazing, but it just isn't a proper korokke.
