If you love Fish and Chips but want something fresh
and high-protein, you need to try this.
This is Samke Harra (Lebanese Spicy Fish), but I’ve deconstructed it into a roasted potato boat.
It’s basically the Mediterranean’s answer to a tuna melt but with seared cod (better to use sea bream or Branzino), creamy tahini, and a kick of chili and cilantro.
The build:
• The Base: Hollowed and baked potato boats, served with the crispy “bites” from the center.
• The Protein: Perfectly seared and flaked Cod.
• Ihe Sauce: Whisk tahını and lemon juice (cold), then add to sauté of garlic, cilantro, onion, and red pepper. Bring it to a simmer to let the flavors meld.
• The Assembly: Fold the fish and crispy potato bites into the tahini sauce, then fill the boats and serve.
• The Garnish: A final drizzle of Shatta (you can use chili flakes) and a shower of fresh parsley for a vibrant finish.
