Bacon Mushroom Spinach Quiche

1 unbaked pie crust, 9 inch
5-6 slices Bacon, cooked & crumbled
1 cup Mushrooms, fresh sliced
1- 1 1/2 cup Spinach, chopped
1/3 cup Onion, chopped
1 cup Milk, or creamer or half & half
5 eggs
3 Tbsp. Butter, melted
1/2 tap. Salt
1/2 tsp. Garlic Powder
1/4 tsp. Pepper
1 1/4 cups Swiss Cheese, shredded (or whatever kind of cheese you like)

1. Preheat oven to 350 degrees.
2. Make a pie crust or use a store bought.
3. In a skillet over medium heat, cook bacon, mushrooms, onion until slightly browned.
4. Add spinach to skillet and cook until wilted.
5. Remove from heat and drain on a paper towel lined plate.
6. In a bowl, mix the eggs, milk, salt, pepper, melted butter & garlic powder with a whisk until well blended.
7. Add the cooked bacon & veggies to the egg mixture along with 1 cup cheese, and stir well.
8. Pour into crust and add 1/4 cup cheese on top.
9. Bake at 350 degrees for 40-45 minutes or until the center is set and does not jiggle.

  1. Beautiful quiche! I usually use ham but need to try bacon. I love the addition of green onions. I've also used canned mushrooms when I didn't have fresh ones, and that works nicely, too. Sometimes I don't use a crust to lower the calories and carbs. It's wonderful to have flexible recipes like this – thanks for sharing!
