So happy with this loaf! 😊 Tweaked some things lately and getting better results.

100g Wheat Starter (fed the evening before & again in the morning)

310g Water

500g Wheat Flour 550 (bread flour)

  1. Mix, then wait 1,5 hours

  2. add 13g salt + first stretch& fold

  3. one more stretch & fold, 2x coil folds, 30-45 min apart

  4. let ferment for ~3 hours (it is warm in our kitchen)

  5. Form & put in fridge for about 13 hours

  6. Bake in dutch oven, First 20min at 245 Celsius with lid + 2 icecubes, 20min without lid at 230 Celsius

  7. deepened the score after 7 min in the oven (had problems with tearing before that)

Tastes great! Working on more consistency now 😄
