You probably never had a Turkish soup like this before.. but now you’ll crave it (or I hope you will 😂). This is called ‘Ispanaklı Kiler Çorbası” and you can roughly translate it to a spinach pantry soup. The idea behind this soup is that it’s a soup made from always-on-hand ingredients (or things you have at home and want to create a filling soup). It’s the perfect soup on a cosy snowy (or rainy) day.

Not only is it a simple soup, but nutritionally it’s also doing a lot for you. Spinach brings vitamins (A, C&K) and magnesium. Potatoes add potassium & vitamin C. The wheat & lentils make it extra filling + they also provide fiber, plant protein en more iron. Because of the yogurt (aka its calcium), iron absorption isn’t maximised, but you still get iron from both the spinach& lentils and because there’s vitamin C in the veggies, that helps with the absorption.

If you really want to boost the absorption, add lemon juice to the soup & eat a vitamin C-rich salad next to it. That helps more than removing the yogurt would.

You can also boil the lentils first after washing thoroughly and then adding the grains and potatoes later!
