Ingredients

2 tbsp evoo

1 Large Bell Pepper

1 lb cauliflower florets

1/4 lb spinach

1 lb 90/10 ground beef

34 oz beef bone broth

7 oz box chickpea pasta

2 tbsp flaxseed meal

    Air fry or roast cauliflower with seasonings of choice and a tbsp of evoo at 400 for 20 minutes, I like mine a little crispier. 15 minutes if you don’t.

    Meanwhile 1 tbsp olive oil to pot and sauté diced bell pepper until slightly browned, set to one side of pot
    Add ground beef and press firmly onto the meat and do not disturb for 2 minutes so it can get a nice crust and break apart easier. Mix the bell pepper and ground beef together
    Add 34 oz of beef bone broth and scrape off any bits at the bottom of the pan
    Once it comes to a boil, add chickpea pasta and cook as directed from box.
    Turn off heat, add spinach and flaxseed meal immediately so it wilts, add cauliflower and you’re done!

    Add extra seasonings if you wish, I didn’t with mine. The bone broth carried a lot of flavor. I used flaxseed meal as a healthy thickener.

    Took me about 20 minutes. Splitting it into 6 servings.

    One serving is 386 calories, 16.7 g fat, 26.8 carbs with 6.0 g of fiber and 31.6 g protein.

    Great macros. Lots of veg. Can’t complain.
