ā–¢1¼ cups (212 g) semi-sweet chocolate – I use 50% dark chocolate. Roughly chopped or broken into smaller pieces.
ā–¢1 tbsp (14 g) unsalted butter
▢⅛ tsp salt – omit if using salted butter
ā–¢3 large eggs (separated) – Room temperature. Whites and yolks separated
▢¼ cup (50 g) white granulated sugar – Divided in half — 2 tbsps each
ā–¢2 cups (480 g) heavy cream – cold
ā–¢1 tsp vanilla extract/essence

  1. To eliminate the worry of contamination of raw eggs I will personally use the Ban Mari method for the yolks and the egg white. I do the same for the tiramisu. I keep the water temp at 60 degrees and I whisk for about 3 minutes.
