

















I went to Cypsèle alone for lunch and genuinely loved the experience. The location on Île Saint Louis is already charming, but the restaurant itself is truly beautiful. The architecture and interior design are striking without feeling overdone. The space was redesigned by the London based studio Nice Projects, who transformed a former pharmacy into something both elegant and warm. Historic details like the old wooden shelving and mosaic floors have been carefully preserved, while modern touches bring a real sense of calm and personality. It’s a place where you immediately feel comfortable, even when dining solo.
I chose the €85 tasting menu at lunchtime and found it consistently impressive. The food is refined, confident and very well balanced. Each course feels thoughtful and precise, with a clear respect for ingredients and seasonality. I had a glass of Saumur Blanc, which worked beautifully with the menu and showed real care in the wine selection.
Chef Marcin Król is clearly at the heart of what makes Cypsèle so compelling. His background, often mentioned in recent articles, is remarkable. He trained and worked in some of the world’s most demanding kitchens, including Noma in Copenhagen, Boragó in Chile and Oaxen in Sweden, before settling in Paris. That international experience really comes through in his cooking. The dishes feel modern and creative but never forced, rooted in French technique with subtle global influences.
The wine program deserves special mention as well. Quentin Loisel, the sommelier and co founder, previously head sommelier at Le Jules Verne, has put together a thoughtful and intelligent selection. His choices enhance the food rather than compete with it, and the overall approach feels both serious and accessible.
Service throughout the meal was solid and professional, attentive without being overbearing, which made the whole experience relaxed and enjoyable.
Cypsèle already feels like a restaurant that belongs in the Michelin Guide, and if they continue on this path, a first star seems very realistic. It’s an exciting new address in Paris and one I would happily return to, whether on my own again or with company.
