Lunches for this next week set: Chorba Frik. by loki2002 5 Comments loki2002 4 weeks ago **Ingredients**600 g lamb or chicken pieces2 onion, chopped4 tomatoes, peeled and grated1/2 cup freekeh (cracked green wheat)4 tbsp tomato paste2 carrot, diced2 zucchini, diced2 stalk celery, chopped1 cup chickpeasOil or smen1 tsp cinnamon, to tasteBlack pepper, to tastPaprika, to tasteSalt to taste**Directions**In a large pot, heat oil or smen and brown meat. Remove it from pot add more oil of necessary and sauté onion until translucent.Add carrots, zucchini, and celery. Mix well sauté for a few minutes.Add back meat, spices, tomato paste, and grated tomatoes. Cook for a few minutes. If using dried chickpeas add them now.Pour enough water to cover and bring to a boil. If you have the bone from the lamb add it to pot for extra flavor.Add frik, reduce heat, and let simmer for 45–60 minutes, stirring occasionally.
