Greece: Psari Plaki (Baked Fish) in Winter Greens and Herbs – Psari Plaki is a Greek-style fish baked in the oven. We made it two ways including the traditional recipe (with lots of tomatoes and onions) and then also a second option more focused on winter greens. We used the greens and herbs we could find in the central U.S. including spinach, swiss chard, green dandelions, parsley, and dill. We served it with oregano and feta roasted potatoes.

Key ingredients include cod, various greens (fresh spinach, chard, and dandelion greens), fresh herbs (parsley and dill), plum tomatoes, red onions, yellow potatoes, lemon, feta cheese, garlic, Greek olives, olive oil, oregano, pepper, and salt.

Key Steps:
1. Option 1 – Make the baked fish w/ winter greens.
– Prepare the vegetables. Cook thinly sliced red onions (1) and garlic (8 cloves – we like garlic) in olive oil with a sprinkle of salt. Add in oregano and pepper. Simmer for 15 minutes.
– Add the greens and herbs. Stir in all of the greens (4 cups – fresh spinach, swiss chard, and dandelions) and cook for 5 minutes. Add parsley and dill. Add capers if desired. Take off the heat.
– Cook the fish. Add cod nestled into the vegetables and top with sliced lemons. Add a small amount of water. Cook covered for 20 at 400 degrees (F). Sprinkle with more fresh parsley and dill and squeeze lemon on top before serving.

2. Option 2 – Make the baked fish w/ tomato. The only difference here is that we included chopped plum tomatoes (1 can – 28 ounces) and simmered for 15 minutes. We added a smaller amount of fresh greens (2 cups) and olives. The fish is still cooked covered for ~ 20 minutes at 400 degrees (F). Sprinkle with fresh parsley and dill and squeeze lemon on top before serving.

3. Make the potato side dish. Quarter potatoes (we used 2 pounds of yellow creamer potatoes) and add olive oil, dried oregano (2 TSP), garlic (6 cloves chopped), lemon (juice of 2), salt, and pepper to taste. Roast the potatoes at 400 degrees (F) for 1 hour. Add in feta cheese (4 ounces) and fresh, chopped oregano (2 TBSP) after baked.
