The Joy of Cooking starts out a sauce recipe with "Not every householder has to worry about what to do with leftover champagne, but should this appalling dilemma be yours…"

My appalling dilemma is a large bag of unroasted cashews. I am thinking of Salted Cashew Bars to start.

But does anyone have other suggestions that don't involve making cashew cheese?

    It doesn’t look like there’s a recipe on SE, but I cannot recommended Shahi Paneer enough – it’s one of the most decadent curries you’ll come across. Fresh curry leaves essential!

    Cashew crusted fish. Cashew Butter, Cashew hummus. Cashew pesto, thai brown curry chicken with cashews

    Store them in the freezer so you don’t have to decide! Measure out a cup each into some qt freezer bags, then pop them into a gallon freezer bag, and grab what you need as you go. Will stay fresh enough for a couple years.

    Cashews can be used in a lot of Indian recipes to make creamy sauces / gravies. You could make a big batch of korma or similar and freeze.
