🍝 Pops’ Rigatoni alla Norma
Ingredients
🍆 1 large eggplant, cubed
🧂 Salt, to taste
🫒 Olive oil, as needed
🧄 3 cloves garlic, sliced
🍅 1 (28 oz) can crushed tomatoes
🌶️ Pinch red pepper flakes (optional)
🍝 1 lb rigatoni
🌿 Fresh basil, torn
🧀 Ricotta salata, grated
⚫ Black pepper
Method
🍆 Salt eggplant, rest 20 min, pat dry
🫒 Fry in olive oil until deep golden, set aside
🧄 Gently sauté garlic in olive oil
🍅 Add tomatoes, salt, pepper, chili flakes
⏲️ Simmer 15–20 minutes
🍝 Boil rigatoni in well-salted water until al dente
🥄 Add eggplant + basil to sauce
🍝 Toss pasta with sauce, splash of pasta water if needed
🧀 Finish with ricotta salata and olive oil
