Me and my mom make it in the oven and its so good! Also I've never seen anyone make it with cheese.. it looks so good tho so idk by I've never heard of it!
I like when the syrup is on the side like that because if someone else is putting it on they always put too much. Also cardamom in the syrup is really good too.
If you’ve never had atayef before – these are pretty similar to pancakes but made with semolina, and they are only cooked on one side. They’re then stuffed with a variety of fillings, some including walnuts, thickened cream or a variety of cheeses.
This dessert is especially popular during the holy month of Ramadan! 🌙Traditionally, they’re deep fried and then doused in sugar syrup, but I prefer to air fry them for a comparable crisp exterior without all the oil and calories!
Recipe ⤵️ 1 cup flour 2 cups fine semolina 4 cups warm water 1 tbs baking powder 1/4 tsp baking soda 1 tsp instant or active dry yeast 1/4 tsp salt 1 tsp vanilla 3 tbs sugar
Pour everything into a blender, blend for 2 minutes. Set aside to rest for 1 hour, then blend for another minute.
Cook in a nonstick pan on medium low heat. Add about 1/4 cup of batter per pancake. Once all the bubbles on top dry up, remove and set aside on a clean kitchen towel. Keep them covered while you work so they don’t dry out.
Once the pancakes have cooked, you can fill with your choice of nuts, thickened cream, and cheeses.
Cheese:
Mix sweet cheese and mozzarella – skip the mozzarella if you don’t prefer the sweet + salty taste
Walnuts:
1 cup chopped walnuts 1 tbs sugar 1 tsp cinnamon

Sugar syrup:
3 cups sugar 2 cups water 1 tsp lemon juice 1 tsp orange blossom water
Mix until sugar dissolves, then boil for 10 minutes. Set aside to cool completely.
AIR FRYING:
Place your atayef in the air fryer basket and spray both sides with oil OR brush with ghee/butter. Air fry at 400 for 8 minutes, flipping halfway through. Drizzle with sugar syrup and ENJOY!
*NOTE* I find that the pancakes turn out better on heavy-bottomed pans
I have unintentionally been making a bootleg version of these for breakfast! I have some small pancakes i top with cottage cheese and fold like a taco, I called them deconstructed blintz 😂 my gma made a polish version of these with crepes! She would add orange juice to the batter (depression era childhood for her so used what they had)

we usually fill them with ground hazelnuts
but these look amazing
