That classic pizza combination but made into fried rice instead. Personally, I think pineapple works far better in fried rice anyway!

Serves 4

Ingredients
Ham and Pineapple Fried Rice
• 1 tablespoon rapeseed or sunflower oil
• 1 tablespoon sesame oil
• 1 onion, peeled and finely diced
• 1 red bell pepper, deseeded and diced
• 10 button mushrooms, sliced in half
• 115g (2/3 cup) frozen peas
• 150g (1 cup) cooked ham chunks (or shredded ham)
• 400ml (14oz) can of pineapple chunks in juice, drained
• ¼ teaspoon salt
• ¼ teaspoon black pepper
• 600g (4 cups) cooked white long grain rice, cooled
• 2 tablespoons dark soy sauce
• ½ teaspoon garlic salt or garlic powder
• 2 medium eggs
• juice of ½ a lemon

To serve:
• 2 spring onions (scallions), chopped
• Sriracha or sweet chilli sauce
• Lemon wedges

Instructions
1. Add the rapeseed oil and the sesame oil to the wok and heat over a medium-high heat.
2. Add the onion and cook, stirring regularly for 5 minutes until the onion softens.
3. Add in the red bell pepper, mushrooms, peas, ham, pineapple, salt and pepper. Cook for a further 3 minutes, stirring regularly.
4. Add in the cooked rice and turn up the heat to high. Toss everything together using a spatula.
5. Add the soy sauce and garlic salt and continue to cook, moving everything around the pan regularly so it doesn’t stick, until the rice is hot (this should take about 5-6 minutes).
6. Once the rice is hot, push the rice over to the side of the pan and crack the eggs into the space. Move the pan so that the bit with the eggs in is right over the heat. Move the eggs round slowly until they start to scramble. As they scramble mix the eggs into the rice.
7. Add the lemon juice, stir, and taste. Add more soy sauce or lemon juice if needed.
8. Divide between four bowls and top with chopped spring onions, a drizzle of sriracha and the and lemon wedges.

Tip: Ensuring the boiled rice is cooled before using will help stop if sticking together and will ensure it absorbs more flavour. You can replace with ready-cooked rice if you’re short on time.

Make it vegetarian: Swap out the ham for a vegetarian alternative, such as seitan.
