I’m guessing Americans are whining? Pork has been fine to eat pink for quite awhile now. It’s just that we’re not accustomed to it like we are with beef. Hell, Germans eat it straight up raw with a little onion and seasoning and have for forever.

I wouldn’t have eaten this years ago, but I’ve worked in a few fancy restaurants since then and as long as it’s good quality meat, fresh & cooked in a clean kitchen.. I bet this was mind blowingly good.

My Japanese wife (here in Japan) has misgivings. She said ask the chef to cook just a skosh more … even in Japan one can get trichinosis.
