Signature dishes we photographed: Dragon roll, white dragon roll, rainbow roll and hibachi bowls

Why is it so popular: Hibachi bowls are by far the most ordered dish. It gives the best of both worlds. You get tender steak, juicy shrimp, fried rice, vegetables and our house sauces all on one plate. It is filling, flavorful, and consistent every time.

As for our sushi, our dragon roll is the best seller from our selection because it delivers the perfect balance of flavor and texture without being overwhelming. The combination of fresh eel, creamy avocado and our house eel sauce makes it rich and savory. It’s approachable for first-time sushi eaters but still satisfying for sushi lovers. It consistently looks and tastes like a premium roll, which is why customers order it again and again.

How is it made: Our dragon roll is made by rolling seasoned sushi rice and nori with fresh ingredients, then topping it with slices of ripe avocado and eel. It’s finished with our house eel sauce and some toasted sesame seeds.

Price: Part of the buffet, which is $17.99 for adults for lunch, $25.99 for dinner/weekends.

What does it taste like: The dragon rolls tastes rich, savory and smooth. The eel is tender and slightly sweet, the avocado is creamy and buttery, and the eel sauce ties everything together with a umami flavor. Not fishy at all!

How did you come up with the dish? We did not come up with the dragon roll, but we started the hibachi custom bowls to deliver a consistent, customizable experience similar to poke bowls or Chipotle. Customers choose their ingredients, and our chefs cook everything fresh behind the scenes. The goal was to make hibachi simple, approachable and reliable while still tasting freshly made.

How many of the items do we make each week? Hibachi bowls: 2,000+ per week. Dragon rolls: 400+ a week.
