There’s actually a specific tiramisù adjacent recipe for recycling pandoro which is called pandoro star. You cut the pandoro in slices widthwise and then rearrange them so the points don’t match creating a star-shaped pyramid. Use the coffee and mascarpone mix between the layers, chopped dark chocolate and optional walnuts. Let it rest, then slice it like a cake.
I am also all for alternatives to ladyfingers in tiramisù but the above recipe is really good.
