This is my favorite pasta dish to make: Linguine with smoked oyster. I know oyster isn't traditional, but the dish does have heavy Southern Italian influence (or at least I'd like to think so). Sauce base is olive oil, garlic, anchovies, pepper flakes, and parseley.

I like this one bc the oceanic scent and umami are in great sync with a tiny spice kick. Breadcrumbs toasted with olive oil is magical.

Would nonnas approve the attempt?

Idk I feel like you dried up the condiments too much

Smoked oysters in Italy? Sounds like an Americanized dish…

  8. Nonna always appreciates when someone else joins her in the kitchen

It’s basically the same thing you would do with mussels but using oysters instead, seems convincing to me but not sure if canned oysters are any good. I think my nonna would approve 😀

I guarantee you at least one old Italian lady has put canned oysters in her pasta in the history of ever. It looks banging and I can imagine it tastes great.

I used to work at an italian restaurant where we made similar with fresh oysters, also a sea urchin equivalent.

No, but nonne are hard to please when it comes to cooking. It’s their way or the highway

Yes, he would approve. It’s your take on pasta with clams, and even though you used oysters, you still stuck to tradition. Well done, buddy.
