



I only started baking last month and done a handful of loafs so far and each has been a success (in my eyes 🫣). Baked these last night and they just keep getting better!
Ingredients I used for double loaf:
– 1000g bread flour
– 725g water
– 20g salt
– 250g starter
Inclusion loaf, measured with my heart:
– crispy chilli oil
– spring onions
Process:
– mix all together, let sit for a little over an hour.
– 2 x stretch and folds, then 2x coil folds every 30-40 mins
– BF for about 4 hours
– split in half, laminated inclusions for the chilli loaf, shaped and cold proofed for maybe 25 hours.
– baked at 260℃ with lid on for 35 mins, 20 mins lid off at 230℃
