This was so much fun! When my partner and I are too lazy to cook we usually go for cheese. Depending on what's in the fridge, this usually turns out to be a baked camembert with crusty bread and balsamic, or various cheese and crackers.

We decided to pull out the cheese and add some tinned fish, pickled courgettes, prosciutto and salami instead of having it with just a big bit of bread. We enjoyed it so much we used the leftovers to make another board the next day. 10/10 easy meal, would do again. Would probably add something like grapes next time to lighten it up. If it were up to me I would have a tin of mussels with crisps, but my partner isn't as much of a fan.

In order of appearance:

– Trader Joe's Lightly Smoked Salmon

– Patagonia Lemon Olive White Anchovies

– Fangst Salmon with Lemon Verbena and Sea Buckthorn

– Minerva Petingas in Olive Oil

Is it odd that the Trader Joe's salmon was my preferred salmon? It wasn't as dry as the Fangst, and I was a bit disappointed the herbs were so subtle. Minerva was also an excellent tin.

    Is that Shropshire Blue cheese? I fell in love with that stuff in England last year and came home to find I could get it at Trader Joe’s.
