Hopefully this counts since I will be using it in ramen in a few days! I was inspired by home cooking methods for carnitas, so I trimmed it, cooked it in oil at 275 for 4.5 hours, then roasted at 500 for 10 minutes and broiled for 2 minutes and it was amazing. Juicy, tender, with little crispy bits

So gorgeous 🤤
Chashu-chetta?
So you confit it?
You’re overcleaning your trays.
You should rub them with oil and bake them in the oven like you would season a cast iron. They will turn nonstick.
stop cleaning them with the green pad or steel wool. Clean them with a blue pad.
Help out a non-American.., what is “broiling?”
Lemongrass in the middle adds flavor dimensions.
