Marry Me Chickpeas

    ###RECIPE
    *3-4 servings, 25min prep time*

    * 1 onion
    * 3 clove garlic

    Sauté in oil

    * 1/2 jar (100g) sun dried tomatoes, chopped
    * 1 can (220g) cooked chickpeas
    * 1 Tsp paprika
    * 1 Tsp dried Italian herbs
    * 500 to 600ml veg stock
    * 100ml vegan cream

    Let it simmer 15mins. Finish with parsley, lemon juice and salt. Enjoy with bread or pasta.

    I like it but I’d sub the sun-dried for regular diced tomatoes.. I don’t like all that sweetness from the sundried

    I might be a dumb-dumb but… What’s with the pause on the onion like using onion was a weird thing?

    I’d use berbe harissa instead of chili powder/paprika. Add a green like spinach, collard greens or kale.
