Konjac noodles (also shirataki or miracle noodles) is a bit divisive topic – some like em, a lot hate them for various reasons (texture / taste / digestive problems). Well, I like them! So today I am sharing this simple recipe that is rather quick to throw together, if you have similar ingredients.
Recipe:
Ingredients
200g Package of konjac noodles
100g Frozen cooked greenland prawns (package says these are 64 kcal per 100g, good volume value)
120g Champignons
5g Salad leaves (lamb's lettuce)
2g nutritional yeast to sprinkle on top in the end
Ingredients for sauce
60g Greek yogurt (mine is 2% fat)
6g nutritional yeast
Bunch of spice (see further)
Spice for sauce that I use:
Primarily used for color only: mainly turmeric, with some smoked paprika, mustard and nutmeg
For taste, ones that I consider more or less required: salt, MSG, garlic powder, onion powder/flakes
Plus anything else you want to suit your personal taste!
Mix yogurt, nutritional yeast and spice, put in microwave with the goal to heat, but not boil. For my 800W microwave it is ~40 seconds at 50% power, but most likely you will have to find your own time through trial and error. Once done, give it a stir.
Time heating with the rest of the meal and you are all set!
For the rest of the meal, defrost prawns, wash noodles under tap water, cut mushrooms. First cook mushrooms, when they are close to desired level of doneness add prawns (ones that I use are already cooked) and start heating up separate pan for konjac noodles. Throw washed noodles into empty hot pan at max heat, no oil or anything, then add spice of choice (I use same "coloring" spice as for sauce, good dose of MSG and then whatever I feel like at the moment). Keep stirring for about two minutes, then add mushrooms and prawns and cook them together for another minute or two, and also start microwaving sauce somewhere around this time. Transfer everything into a bowl, mix with sauce, sprinkle more nutritional yeast on top and decorate with some salad leaves (or not).
