I was craving Motz Style smashburgers (Oklahoma smash burgers) for a couple of weeks now and finally got the chance to make them for the family tonight.

I think America’s test kitchen has the right take when it comes to Oklahoma onion burgers. They do them onion side down first, then flip. You get a lot more char on the onion.
