I work at a deli in Oregon where the owner gives us freedom to run sandwiches when we want to get creative or have things coming close to date on the market side. These are two of my recent favorites

1) “It’s Whats for Dinner“ – Wagyu beef bologna, Cooper’s American, pickled Jimmy Nardello peppers, arugula and Duke’s.

2) “Nancy’s Chicken Salad” – Roasted Southwest Chicken (rubbed with garlic and onion powder, dried chipotle, black lime, afghan mountain cumin and smoked paprika then roasted), house made dill pickles, red onion, celery and dukes mayo.

    This is how bosses in the food industry should be! Encourage your employees to be creative which not only makes them better chefs, better problem solvers etc, but also means you’re constantly finding new things that work to refine the menu.

    And more importantly, both of these sound and look awesome.

    This post has reminded me that I’ve been dying for a fried bologna with fried onions and mustard on a hard roll.

    I don’t currently have any baloney or hard rolls. I have imported ham and pastrami and swiss cheese. I love a good Reuben, but now all I will think of today is fried baloney.
