A simple tahini sauce with garlic and herbs.
Good on almost anything.

This is one of those sauces I always go back to.

3/4 cup tahini
1 cup of ice water (divided)
1 lemon (divided)
1 garlic
Salt
Herbs: Parsley & cilantro, handful each

1. Add raw tahini to a food processor or blender with some of the lemon and pinch of salt and blend. Start adding the ice cold water gradually blending between until you reach a cohesive, somewhat thick and creamy texture.
2. Add garlic, more lemon and salt, and mix tasting as you add. The quantity will depend on the tahini and amount of water used. Blend until you have a wonderful tasting tahini and a good texture.
3. Finally, add the herbs and blend well until smooth, creamy and amazingly green.

*** remember that tahini gets thicker in the fridge and runnier at room temperature.
