I also add in muscles and scallops. Tastes absolutely delicious!
Break all the shells into 1/4 inch pieces and add to a pot with 2 cups of water, boil uncovered until the water is gone then add your butter and stuff to fry the shells. Strain well and continue from there. Breaking it up releases more of the lobsters essence, I blend it kind of fine and Strain with cheesecloth, trust me that extra step will improve an already amazing dish… thank me later lol
