if needed heres a vegetarian version
use thick portobello mushrooms marinated the same way as the chicken in whiskey, olive oil, smoked paprika, chipotle, cayenne, garlic, onion, salt and pepper, grilled hard so they get some real char. Instead of bacon use crispy onion rings tossed with the same smoked paprika and black pepper seasoning, pepper jack on top, bread and butter pickles, tomato, green leaf lettuce, all on a toasted brioche bun, finished with that jalapeño honey sauce with mayo, sour cream, fresh jalapeño, honey, olive oil and a splash of vinegar.
