The BEST Coconut Cream Pie with Homemade Meringue

We’ll guide you through preparing the filling and meringue, making this one of our favorite easy dessert recipes. 🡪 1 1/2 cup sweetened flaked coconut
🡪 pie crust
🡪 1/4 cup salted butter
🡪 12 oz. can evaporated milk
🡪 1/2 cup water
🡪 5 large eggs, separated
🡪 3/4 cup granulated sugar
🡪 1/4 tsp salt
🡪 1/2 cup cold water
🡪 3 Tbsp corn starch or 6 Tbsp flour
🡪 4 Tbsp salted butter
🡪 2 tsp vanilla extract
Toast coconut at 350°F until golden, tossing occasionally. Pre-bake pie crust for about 20 minutes
at 375°F until golden after the coconut browns.

Melt butter in the microwave, then whisk in milk and 1/2 cup water. Beat egg yolks separately and add them with salt and sugar; whisk again. Whisk starch (or flour) with cold water, add to the pudding, and whisk thoroughly.

Microwave on high for 4 minutes. Remove and whisk thoroughly, ensuring that you whisk along the sides and bottom to incorporate any starch that has settled. Continue to cook for 2-minute intervals until the filling is thick and creamy. Remove from the microwave and whisk in vanilla and butter. Reserve 2 tbsp. toasted co-conut to garnish the pie and mix the remaining coconut into the pudding. Pour the filling into the pre-baked pie crust. Top with Meringue Recipe #446. Seal the meringue around the edges of the crust, leaving no holes. Bake at 325°F for 25 minutes, or until golden brown. Garnish with coconut.

Do not add coconut to top o f pie until 10 min-utes of baking time has passed. This will ensurethe coconut doesn’t overbrown.

  1. I love your recipe! I just use 3/4 C sugar and 1 C cold milk to dissolve my corn starch! Otherwise we do the exact same! I cook mine in the microwave as well! I started cooking mine in the microwave as soon as l got my first? I cannot remember? But l am 72 n l know I had one when l was in my early 20's! I thought l was the only one that did so until l watched you make a chocolate pie! lol l love your channel and careful instructions and the way you are unafraid to say the brand you use and love! I too have you master cookbook and l love it! I have read it cover to cover! It's great n l highly recommend it for new cooks and old ones! We never get too old to learn! Cooking is my happy place! I love feeding people good food!

  2. Have you ever figured out how to make a sugar free? Both my kids have to have no sugar diets! For health reasons! I have been meaning to try making them one with a sugar substitute but just have not done so! My daughter was diagnosed with Lyme b Fibro when she was in her early 40's and had been sugar free for several years before because it would cause her to flare n she and my son have RA n sugar is not good for it or them! They love sweet potato pies and l make them and buttermilk at the holidays! I almost made a chocolate n coconut for Christmas but l decided l had baked enough! lol

  6. I have enjoyed cooking for 65 of my 74 years on this Earth and never heard of putting corn starch in meringue, old dogs do learn new tricks. That pie looks good enough to not share with anyone!.

  7. I think you're supposed to line your crust with parchment paper or foil before adding the pie weights. I prefer to just use old dry beans–they're smaller so you don't get the divots, and I've used the same ones for years.
