I’m sick and couldn’t grocery shop. Just wanted to use up what I had in the fridge, which was getting toward the end of its usefulness. Turned out delicious.

I didn’t use a recipe, but here’s what I did:
– Diced two big onions and three big carrots – Set them to saute in the Instant Pot in olive oil – Chopped and added ~8oz of mushrooms – Added salt and pepper – Set in ~1.5 pounds frozen chicken breast – Added marjoram, sage, and two bay leaves – Dumped in six cups of water and a heaping tablespoon of chicken better than bouillon – Cooked on high pressure for 14 minutes – Removed and cut up chicken – Replaced chicken and also dumped in ~12oz kale, which cooked in the residual heat – Swirled in a bit of heavy cream (maybe 1/4C?) to taste – Topped with lemon and calabrian pepper
While it was in the pot, I made orzo on the stove (for a picky kid) and then dumped in the rest after the soup finished cooking (about half a pound). I would have preferred rice, but a cook has to accommodate her audience!
