1. Thaw and dry the fish completely 2. Heat oil to 190C/375F 3. Season fish with salt and pepper 4. Dust fish with rice flour 5. Mix Batter 6. Batter fish and cook until golden 7. Drizzle extra batter over the top as soon as you add to oil

I saw Heston’s recipe using vodka but haven’t tried it because I didn’t want to sacrifice the beer flavor. Will have to try this.

* 140g self-rising flour
* 2 tablespoons rice flour
* 1 teaspoon baking power
* 250ml Beer
* 60ml Vodka
