Serves: 6–8

Ingredients

Mushroom Topping
• 3 tbsp salted butter
• 2 small containers mushrooms, sliced
• 3 cloves garlic, minced
• Salt and pepper, to taste

Burger Patties
• 2 lbs ground beef
• 2 eggs
• 1 tbsp Italian seasoning
• 1 tbsp garlic powder
• 1 tsp dried thyme or 1/2 tsp fresh thyme
• 1 onion, minced
• Salt and pepper, to taste
• 2 tbsp salted butter, for frying

Burger Seasoning & Assembly
• 6–8 hamburger buns
• 1/2 tsp onion powder
• 1/2 tsp extra garlic powder
• Salt and pepper, to taste
• 6–8 slices Swiss cheese
• Garlic mayo

Method

Prepare the Mushroom Topping
1. Heat a large pan over medium heat and melt the butter.
2. Sauté the minced garlic until soft.
3. Increase the heat to medium-high and immediately add the mushrooms.
4. Cook for 10–15 minutes until the mushrooms are well-browned, stirring occasionally. Remove from heat and set aside.
Prepare the Patties
1. In a large bowl, mix the ground beef, eggs, Italian seasoning, 1 tbsp garlic powder, thyme, minced onion, salt, and pepper.
2. Form into 6–8 patties and place them on a tray lined with parchment paper.
3. Cover loosely with plastic wrap and freeze for at least 3 hours to ensure they hold their shape during cooking.
Cook the Burgers & Toast the Buns
1. Heat a large pan over medium-high heat and melt 2 tbsp of butter.
2. Place the patties in the pan and cook for 5–6 minutes.
3. Season the tops lightly with the onion powder, extra garlic powder, salt, and pepper.
4. Flip the patties and cook for another 5 minutes or until fully cooked.
5. Place a slice of Swiss cheese on each patty. Cover the pan, remove from the heat, and let them rest for 3–5 minutes so the cheese melts.
6. While the meat rests, open the hamburger buns and place them face down in the pan to soak up the remaining butter and juices until golden brown.
Assembly
1. Top Bun: Spread with garlic mayo.
2. Bottom Bun: Pile on the sautéed mushrooms.
3. The Middle: Place the beef patty with the melted Swiss cheese over the mushrooms.

Enjoy!
