


I usually do a batch of tonkotsu every winter but haven’t been able to this year due to my wife and I having our first child – finding 30 minutes to make dinner has been difficult let alone 18+ hours for tonkotsu. My wife decided to surprise me with a pressure cooker after hearing me mention to one of our friends I could make it in a fraction of the time with one. I made a small batch of broth this weekend and couldn’t be happier with the results, especially for my first attempt! I got so excited to make this I forgot to boil and marinate some eggs! Next week I’m going to try making tori shoyu ramen!

I would love if you could share the recipe you used for the pressure cooker! Tonkotsu has always been my favorite broth but the time it takes has made me anxious to try and tackle it.

It took me a while to notice that wasn’t an empty Dutch oven in the first pic. I thought somehow you’d confused it for an instant pot.

Looks dope. Curious if you had strong feelings about the mouthfeel vs an 18 hr boil? I’ve done both, and always seem to find the instant pot version a liiiiiiiittle less. Not much though… probably not enough to justify another full day boil. Plus, my wife will kill me if I do it while she’s home. Been doing chicken/beef/pork paitans with the instant pot, though, and I’m happy enough.
