One of our viewers left a comment that she took our Cream of Chicken Soup recipe and turned it into broccoli cheese soup — and I thought that was such a great idea, I had to try my own version! Today we’re using that classic cream of chicken base as our starting point and building a thick, creamy, cheesy broccoli soup that’s pure comfort food.
We start with a butter and onion base, add a flour roux for that creamy thickness, then bring in chicken broth, carrots, and our seasonings — including a little smoked paprika that gives it something extra special. The frozen broccoli gets thawed and drained so it doesn’t water down the soup, and then we finish it off with sharp cheddar cheese and a splash of heavy cream. It all comes together in one pot, and it’s ready in about 45 minutes.

📋 BROCCOLI CHEESE SOUP
1 stick (½ cup) butter
1 medium onion, diced
2–3 cloves garlic (or 1–2 squeezes minced garlic)
1 cup all-purpose flour
4 cups chicken broth
2 cups milk
1 medium carrot, diced or shredded
24 oz frozen broccoli (two 12 oz bags), thawed and drained
1 tsp salt (plus more to taste)
1 tsp garlic powder
1 tsp onion powder
½ tsp smoked paprika (optional)
Splash of heavy cream
3 cups sharp cheddar cheese, shredded
Melt butter in a Dutch oven over medium-low heat. Cook onion for a couple of minutes, then add garlic for about 30 seconds to 1 minute. Stir in flour and cook 2–3 minutes until it resembles wet sand. Slowly add chicken broth, whisking to break up flour. Add carrots, milk, and seasonings. Thaw frozen broccoli in a colander under hot water and press dry with paper towels before adding to the pot. Stir in heavy cream and cheese. Simmer on low with the lid on for 20–30 minutes, stirring occasionally. Adjust salt to taste. Serve topped with extra cheese and croutons.
