Just started Med Diet this past week. This is one of the easiest meals I’ve thrown together so far, this might be helpful for those starting as well. This meal is high in protein and fiber, will be adding this to my weekly rotation!

I didn’t measure everything but this is how I made it:
On a hot iron skillet I drizzled high heat olive oil
-1.5 lbs of Argentinian shrimp 10-30 seasoned
-Cherry Tomatoes
-Crimini mushrooms
-Garlic
-Splash of white wine
-Spinach
-Sliced olives (used a variety)
-Lemon juice
-Drizzled olive oil to finish

    Since you said that you just started MD, I add some advice:

    MD serving size for shrimp is be 3-4 oz, so 1.5 pounds of shrimp would be about 6 servings. There doesn’t look to be enough veggies for 6 servings. So… maybe either add more veggies or have some additional ones on the side. Also a side of whole grain (brown rice, quinoa, whole wheat bread, whole grain pasta, etc.) would round things out nicely.
