Beets can be a delicious part of a nutritious Mediterranean Diet. Beets may help lower cholesterol, reduce inflammation and increase heart health, among the other health benefits of beets. Some people don’t like the earthy taste or texture of beets, so I’m always trying to make new beet recipes that taste amazing. This one is exactly that!


This easy vegetarian recipe for golden beets includes just four ingredients and is quick to put together. And, the low-sodium baked beets recipe is ready in less than an hour. Here’s your wholesome, gluten-free shopping list: fresh golden beets, extra virgin olive oil, fresh lemon juice and fresh parsley (check out the health benefits of parsley). Toss to coat then bake until tender. So simple!

Serve these savory golden beets as a healthy vegetable side dish alongside your favorite proteins and grains. I served them alongside a piece of Parmesan-crusted walleye and they were delicious. They add an unexpected pop of color on your plate, too!

Ingredients


3 large golden beets, peeled and cut into similar-sized pieces (about 4 cups) 2 tablespoons extra virgin olive oil 1 1/2 tablespoons fresh lemon juice 2 tablespoons fresh parsley, diced


Here’s how to make it:


In a large mixing bowl, add the olive oil, lemon juice and parsley. Season with sea salt and black pepper, to taste. Stir to combine. (I prefer to squeeze my own fresh lemon juice, but you can use bottled lemon juice in a pinch.)

Add the beets to the mixing bowl and toss to coat the beets in the mixture.

Pour the beets into a 13×9-inch casserole dish or baking pan in an even layer.

Bake in a preheated 375-degree F oven. About halfway through the baking time (after about 15 to 20 minutes), remove pan from oven and stir beets to re-coat them in the mixture.

Put them back into the oven to continue roasting for about 15 to 20 more minutes, or until crisp-tender.

Serve warm. Store leftovers in a container in the refrigerator and reheat in the microwave.
