Went a little higher with the hydration this batch. I had a little difficulty handling the dough after the cold firmentation process. Got a little more spring in my crust. I sliced the pineapple into smaller pieces and then grilled them to remove some of the excess moisture.

I asked my buddy what he thought of the pizza. When he didn't answer, I looked over to see that he was well into his second slice after only a couple minutes! Do you like this combination? Let me know what you think in the comments!

Hand-sliced pepperoni, fresh cut jalapenos, grilled pineapple, (my own) tomato sauce, fresh grated parmesan and fresh cubed mozzarella!

    2 minutes max temp bake + 4 minutes high broil = 6 minutes total bake time

    Best combo for pineapple. I like pickled jalapeños for that lil zip but fresh is so good.

    Good tips on pineapple, I’ll cook them a little or even 30-45 seconds in the microwave to remove 1/2 the water.
