Very impressed with carbon steel coated aluminum pans. Very light weight and extremely scratch resistant to metal utensils.

Tried pure carbon steel before but found they warped very easily when the temperature gets hot too quickly. The aluminum core improves this but you still need to heat the pans slowly.

    The best luck I’ve had with rolled omelette is with a cheap Walmart nonstick skillet. And I’ve had it for over 10 years.
