As a dane, I’ve never understood Noma. Half of it is not stuff you eat, or should eat, the portions are ridiculous compared to waiting time and price. And then there’s the abuse of the staff…

Absolutely stunning photos but I can’t say it looks super-appealing. The 2000s-2010s culture of chef worship (and the idea that you had to endure years of abuse to be taken seriously in the industry) is what enabled the exploitation of so many at Noma and other similar restaurants. I can’t believe we let people lecture the rest of us about sustainability and honoring nature while mistreating their own staff so badly.

Overall, my experience at Noma was disappointing. It was a mid-January dinner at a shared table, so I was seated with six complete strangers from different backgrounds. I suppose that in a place like this there’s a certain connection that comes from sharing a common interest, so dining with people who have similar passions wasn’t an issue.
If we had to categorize the problem, it was with the food itself. There was nothing objectively bad, nor anything unfamiliar. I’ve had snails before and tried scoby in the past, which were probably the most unusual tastings. But unlike my previous visit, I missed that sense of precision and aesthetic care. That earlier experience took place in spring, and perhaps the season played a role. This time, the presentations felt more spontaneous, loose, and raw.
Overall, the whole experience seemed less polished. Perhaps there are simply too many things happening right now in the orbit of Noma and René, which may be leading to a certain lack of focus on what’s happening inside the restaurant itself.
