GFS running pork cushion in this week’s ad- tbh I’ve never heard of it – everything I see mentions using it like a pork butt. Any sage advice?

Pork cushions usually require a lot of pushin in order to reach the preferred level of tenderness. Don’t worry if it gets hot as there will be a significant level of heat involved as well. In the end when you get your lips around that juicy meat it will have all been worth it, however. Hell what do I know I’m just an amateur meat beater anyway.

A pork cushion (or shoulder cushion) is a lean, boneless, triangular-shaped muscle cut from the pork picnic shoulder. Known for being tender yet economical, it is often considered a hidden gem, offering excellent marbling despite being part of a heavily worked muscle. It is ideal for slow-cooking, braising, roasting, or smoking to make pulled pork, carnitas, and stews.

More cushion for the pushing is always a good thing
