I posted a couple days ago but I just want to make sure I’m heading in the right direction. This is week #2 for me. My mindset when it comes to these recipes is as plant based as possible, pack the veggies, well seasoned, always whole wheats and oil it up!

I served this pasta with chicken thighs and paired with a Spanish white.

Let me know what you guys think and if you would try this!

Nothing is really measured but this is how I made it:
Pasta boiled aldente, drizzled with olive oil after it cooled down
Sautéed tons of garlic, cherry tomatoes, artichoke hearts, green beans (asparagus works too), olives no brine, spinach, splash of white wine (or veg stock)
I combined the sauce and added feta cheese + lemon juice

I served this pasta with some grilled chicken thighs. Seasoned with oregano, chili flakes, garlic salt, black pepper

    Looks tasty! I would eat that up for sure.

    From a macronutrient perspective, ideally the ratio of veggie to pasta would be bigger: the veggie portion should be 1/3 to 1/2 of the meal and the pasta a little bit smaller (though if you have no issues with insulin resistance, you may be fine).

    Also a note that though wine is mediterranean, it is still a carcinogen so not recommended daily (theres a lot of misinformation about wine consumption in particular, but for women 1 glass daily is likely too much). It’s a sensitive topic for a lot of people, but I like getting the word out there as my parent died early from alcohol-caused disease and my family is always using the “wine is healthy” excuse, which is not something that the science supports.
